Honey Recipe: Honey Apple Cake and Honey Sauce

I’m married to an overly veracious, sexual twisted, brainiac… and she cooks too! That’s right boys, I’m married to the perfect woman. So when I got so busy (and just too worn out) to come up with a Friday Honey Recipe this week, I asked my real Honey to help me out.

Now in my defense, I said, “You know? Something easy. Don’t go to too much trouble.”

She heard, “My blogs are now getting 3,000 views, everyone will be judging, so it better be epic!”

So this week’s recipe is actually two recipes: Honey Apple Cake and a Honey Sauce to go over it… and it tastes EPIC!

Honey Sauce

Ingredients

  • 1 cup firmly packed brown sugar
  • 1/2 cup butter or margarine
  • 1/4 cup honey
  • 1/4 cup milk

How to Make It

In a medium sauce pan, bring all the ingredients to a boil. Remember to stir constantly; boil for 2 minutes.

By the way, while it is hot, it pours on like syrup, at room temperature it has the consistency of ketchup, but if you put this into the refrigerator it will get as thick as caramel… which… is… AWESOME!

Honey Apple Cake

Ingredients

  • 1 cup chopped pecans, divided
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1/4 cup honey
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 3 cups chopped Golden Delicious apple
  • Honey Sauce
  • Vanilla ice cream (optional… “optional” if your a psychopath!)

How to Make It

Step 1

Grease and flour a 12-cup Bundt pan, then sprinkle the bottom of pan with 1/4 cup of the pecans, and set aside.

Step 2

Using an electric mixer on medium speed, beat the sugar, oil, and honey like it owes you money… or at least until it is well blended. Then add eggs, 1 at a time (what’s your hurry anyway), mixing just until blended.

Step 3

Combine flour, baking soda, salt, ground cinnamon, and ground nutmeg. Gradually add to sugar mixture, beating at low speed just until blended. Stir in vanilla, remaining 3/4 cup pecans, and apple. Finally, spoon the mixture over the pecans into the pan.

Step 4

Bake at 350° for 55 to 60 minutes. Cool in pan on a wire rack 15 minutes; remove from pan, and place on a wire rack over wax paper. Pour 1/2 cup Honey Sauce over warm cake. Cool and call your spouse into the room to “ooh and aah” over your awesomeness.

Step 5

Slice off a piece (don’t be stingy, it’s a big cake), pour some of the remaining warm Honey Sauce over it, and serve with ice cream.
