Honey Recipe: Bacon Wrapped Chicken with Honey Glaze

This one will be short as I was so busy harvesting honey today, that I forgot to post this week’s recipe. I did cook it though.

In fact, while I was fixing my Mom’s car last Saturday, her refridgerator went out… if it’s not one thing, it’s another.

Luckily she only had a pack of chicken and a pack of bacon in the freezer… e.g. today’s recipe.

Ingredients:

  • 2 lbs free range chicken breast
  • 1 lb   natural bacon
  • 1/3 cup raw honey
  • 2 TBS stone ground mustard
  • 1 tsp smoked paprika
  • Juice from half a lemon
  • ½ tsp pepper
  • pinch of salt

Preheat oven to 350°

Slice chicken into one inch strips. Wrap each piece of chicken with a piece of bacon. Mix the other ingredients in a bowl and then brush them onto the chicken. Place on a baking sheet for 20 minutes or until the chicken is done.

It was great! It’s now actually 12:05am on Saturday but I hope my readers will give me a pass for being 5 minutes after Friday. I’m sending this from my iPhone, so spellcheck be damned.

I’ve got to get back to sleep, tomorrow I’m heading out to an island to remove a beehive from a hunting camp… I’ll tell you all about it Monday.
