Honey Recipe: Honey and Peach Cobbler

Well this week’s recipe is curtsy of my awesome wife. We were selling honey at the farmer’s market in Cleveland, Ms. We set up next to Carry, the Mennonite girl that sells pies. We always try to set up next to her – one because she is really nice, and two because, well let’s face it, the chick sells a lot of pies and so we get a lot of customers just being in her orbit!

Nonetheless, Carry was selling fresh peaches and so at the end of the day, we bought a case from her. By yesterday, these had ripened to perfection and were the best peaches I ever ate.

So this week’s recipe was made with her peaches and our honey to make a super awesome cobbler. Now the crust was a bit (but not too) dry and made it seem more like a crumble then a cobbler but it was still delicious! As I mentioned before, my wife is AWESOME!

INGREDIENTS

For the filling:

  • 3 pounds sliced peaches
  • 1/4 cup honey
  • 3 teaspoons cornstarch
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • Additional sugar as needed depending on how sweet your peaches are

For the dough:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 9 tablespoon cold butter cut into small chunks
  • 1/3 cup boiling water

INSTRUCTIONS

  1. Preheat the oven to 350 degrees. Spray a 9×13 baking dish with nonstick spray.
  2. In a large bowl, toss together the peaches, cornstarch, cinnamon, honey, and salt until well combined. Sprinkle in additional sugar to taste.
  3. Pour the filling into the baking dish.
  4. In a medium bowl, stir in the baking powder, salt, flour, sugar, and cinnamon. Cut in the butter to coarse crumbs. Add the boiling water and stir to form a dough.
  5. Place small chunks of the dough on top of the fruit filling.
  6. Bake for 40 minutes or until golden brown. Cool before serving (though we didn’t) and add ice cream with a honey drizzle.
